Doctors and nutritionists often recommend eating more plant-based recipes for a healthier life. If you are someone who loves to eat meat, you might want to eat a meat-free meal at least once a week. You can make delicious plant-based recipes using local and seasonal produce. Brown Rice & Mushroom Risotto

Create this classic Italian dish with easily available brown basmati rice instead of arborio rice. Sauté a few garlic cloves in olive oil. Create a roux by adding flour to milk. Keep stirring till it gets saucy. Add a few knobs of butter, and grated parmesan. In a separate pan, roast an assortment of mushrooms until toasty. Add the cooked and drained rice. Add the roasted mushrooms, and fresh thyme leaves. Serve the risotto in a pasta bowl. Finish with a grating of parmesan cheese and top with some fresh thyme leaves.

Use Daawat brown rice for this recipe. To add to brown rice nutrition, soak the rice for 30 minutes before cooking.

Pulled Jackfruit Sandwich

In a pan sauté some red onions and garlic in oil. Add jackfruit and pull them using a fork. Add some ground cumin, turmeric, coriander, ginger, and cook for 5 minutes. Add barbeque sauce and cook for another 10 minutes. Add a splash of water to deglaze the pan. Toast the taco shells in a hot pan. To assemble toast multigrain bread slices, add some thinly sliced red onions, barbequed jackfruit, and diced tomatoes. Garnish with fresh coriander leaves and a drizzle of lime juice.

Lentil Meatloaf

In a food processor, pulse together cooked lentils, steamed mushrooms, onions, bell peppers, ½ cup oat flour, 1 flax egg, roasted garlic, salt, and pepper to create a chunky consistency dough. Sprinkle some brown sugar to caramelize the top. Line a loaf baking tray with parchment paper and bake at 350 degrees for 40 minutes. Your lentil loaf is ready. Use a potato ricer to get perfectly mashed potatoes. Add roasted garlic, olive oil, salt, crushed pepper, few sprigs of rosemary leaves, and a splash of almond milk and mix well. For the cranberry sauce, add 250 gm of fresh cranberries in a pan with 1 tablespoon of brown sugar and a pinch of cinnamon. Smash the berries once they get into a compote-like consistency. Slice the lentil loaf and serve warm with a dollop of mashed potatoes and a drizzle of cranberry sauce.

Pad Thai Noodles with Tofu

Cook the rice noodles and set aside. Lightly dust tofu in cornflour and sauté it in a pan in sesame oil. Drain the tofu in a kitchen towel. In a wok, heat some sesame oil, add some thinly sliced ginger, and crushed garlic. Add some thinly sliced green, red, yellow bell peppers, and sliced green chili. Add the drained pad thai noodles. Season with salt, pepper. In a separate bowl, mix some soy sauce, grated ginger, brown sugar, lime juice, peanut butter, red chili flakes, and sriracha sauce. Add the sauce and mix the noodles well. Add the crispy tofu, and top with sliced green onions. Serve hot in a noodle bowl. Tofu has a chewy texture, which makes it a favourite for meat-lovers.
